Mmmmm Citrus Zest Olive Oil Cake

Delicious!!

Perfect for winter nights where you just want a little treat but nothing too heavy….

I like it plain but you could dust it with icing sugar or a dollop of cream or mascarpone.

I have to say that the cake speaks for itself and is really best unadorned:)

Moist, citrusy, heaven…

But best of all, it’s really easy and simple to make……………

and its quick,  you can make it and be eating it in 90 minutes!!

It’s not overly sweet ( dangerous) but so tasty.

So we are going to get Beasty and it’s not a yeasty!!

Who can resist cake?

WHAT WILL YOU NEED? 

2 cups of Flour (All purpose or cake flour is good)

1 tsp Baking Powder

1 tsp baking soda

Pinch of Salt

3/4 cup of Olive oil

1/2 cup of Orange and lemon juice ( just plain orange is ok)

I usually juice the lemons and oranges I use for zest.

zest of 2 oranges

zest of 1 lemon

1 & 1/2 cups of castor sugar

2 eggs

Combine well…

Beat eggs and sugar until fluffy.

Preheat oven to 180 celsius.

Place Flour, salt, baking powder and baking soda in a bowl and combine.

Mix orange and lemon juices and zest into the oil.

Put olive zesty mix into the eggs and sugar and mix well.

Add in the dry ingredients, a few tablespoons at a time, combining well.

Pour batter into well-greased and bottom paper lined cake tin.

I usually use a 18cm cake tin but 16-20cm is ok or even a square one.

Place cake in the oven and bake for 50 minutes or until golden brown and skewer comes out clear.

Leave in tin for 15-20 minutes to cool.

Remove from tin carefully and allow to cool on cake rack.
