Greedyboy Meringues……….

Those greedy boys!! I tell you.

I make something and almost turn around and ITS GONE!!

Mmmmmmm Meringues

I can’t complain though as nothing annoys me more when I make something and for whatever reason they wont eat it.

Take my youngest son, he gets it in his head that he doesn’t like something even though he has never had it!!

So you need to be cunning……

I made brutti ma buoni which has almonds in them.

He says he hates nuts, I know he has never eaten them….

So I make them but hide the recipe……….and he eats them, yum, yum, yum……..

Meringues…

BUT if he finds out what is in them, all of a sudden he hates it again!!

When he was little, I used to have to grate vegetables in his food………….

Or what is double annoying is when he will be fussy about something but eat the SAME thing at grandma’s…..

For example, anything with onions in it……….he picks it to pieces………

Go to grandmas and onions are no longer a problem……..

But I digress……………….

ON WITH THE MERINGUES………..

Ready to bake…

What will you need?

AH Ha ha, Strong arms if you are whisking!! 🙂

4-5 egg whites brought to room temperature.

1 cup of caster sugar.

1 tsp vanilla essence.

Pinch of salt.

1 tbsp cornflour.

What do I do?

NB# You need to make sure all equipment is dry and no water or other ingredients can get in it!! 

No egg yolk, not even a drop, so be careful:)

Whisk egg whites until frothy and light with no unwhisked egg white at the bottom of the bowl.

When egg whites are stiff and peaky, slowly add in sugar, I tbsp at a time.

Whisk each tbsp of sugar in well, it should take 10-15 minutes to add in the sugar.

Add in vanilla and the cornflour.

Pre heat oven to 120 celsius

Place meringues on a baking tray lined with baking paper.

You can also put mix into an icing bag and pipe them on.

You can create till your heart’s delight!

You can make nests and fill them with fruit later, or just blobs like mine and put choc in them:)

Bake for 2 hours  and then cool in the oven for another 2-3 hours to crisp up………….

But if you like them a bit sticky and gooey, then don’t leave to dry out in oven…

Whip up some cream, some creme fraiche, maybe some rum mascarpone?

Lovely with fresh fruit or a drizzle of custard or chocolate cream………
