These cookies, as all the greedyboys will tell you are the BEST!!
My greedyboys have sampled quite a few cookies in their time.
Very decadent but not sickly sweet…
And WELL WELL WELL worth a 5km run to eat one 🙂
Lets GET GREEDY!!
ULTIMATE GREEDYBOY COOKIE!!
1 cup muscovado sugar
1/2 cup brown sugar
1 tsp salt
2 and 1/2 cups flour
1/4 cup black coffee
1 tsp baking soda
1 tsp baking powder
1/2 cup white chocolate chunks
1/2 cup of milk chocolate chunks
2 tsp vanilla essence
2 tsp cinnamon
Melt butter and brown the butter until nut-brown.
Remove from heat and allow to cool.
Add cooled butter to sugars and mix until creamy, usually about 7 minutes.
Combine all dry ingredients in a separate bowl and combine well.
Add egg and vanilla essence to butter and sugar and mix well.
Add in cooled coffee and combine.
Add dry ingredients, (flour, salt, cinnamon, bp and baking soda) 1 cup at a time, combining well.
Lastly, fold in the chocolate chunks .
Cover with gladwrap and leave in fridge overnight.
When you are ready to bake the next day, preheat the oven to 190 celsius.
Roll the biscuit mixture into balls, about 2 tbsp per ball.
Squash down slightly, but these are thick cookies.
Place cookies in the oven and bake until golden brown, usually about 20-25 minutes.
Remove from oven and allow to cool for ten minutes on tray.
Remove from tray and place on wire racks to fully cool.
Slightly warm, delicious!!!

You could vary this recipe greatly, it’s so versatile, as I will show in the coming weeks.
It will almost be our base cookie recipe with a few tweaks!!
You can make them bigger as in the original recipe but i like them a bit smaller…
