Time for something lemony… Luscious Lemon cake.
Now this isn’t really a greedyboy recipe or a yeasty but it is a favourite!!
Nice and simple but chocka full of lemon zest and taste!!
Its nice anytime of the day, morning, noon or night.
Not too sweet but not too tart:)
And easily eaten again and again……
So Lets get Zesty!!
You will need…..
3 cups of cake or pure flour
200g butter softened
1 & 1/2 cups of castor sugar
Zest of 2-3 lemons
1/3 cup of milk
1 tsp baking soda
2 tsp baking powder
Pinch of salt
Place softened butter and sugar in a bowl and beat until creamy and pale.
Add in eggs, one at a time and mix well.
Grate the zest over the bowl, capturing the zest oils as well:)
Put all dry ingredients in a bowl and combine.
Stir in milk to buttery mix and then sift in dry ingredients, half the amount at a time.
Combine well but don’t go overboard on the mixing.
Preheat oven to 190 Celsius.
I like to use a loaf tin for this but you can use a cake tin, there is no right or wrong here.
Place mix into a well-greased and lined(bottom) on the loaf tin/ tin.
Place in oven for 45-55 minutes, until goldy brown or springs back upon touch:
Remove from oven and cool in tin .
When cool, remove from tin onto cake racks.
When cool, you can do three things!!
1) leave as is, maybe a dust of icing sugar.
2) make a lemon syrup and make it like a syrup cake:)
3) make a lemon icing as I have done.
2 cups of icing sugar
30g softened butter
lemon juice to mix from your zested lemons
Sift icing sugar in a bowl and add in softened butter.
Add a touch of the lemon juice and mix till smooth and add lemon juice until the icing is the consistency that you want.
Some like it runny but I like my icing to stand up thick!!
Place or pour on the cake when cool, spread well and leave till it sets…
Then Slice a piece and ENJOY, ENJOY ENJOY!!!
