Feeling a Little Crunchy perhaps?

Yummm Ginger crunch.

This is my ALL TIME favourite non bready, I think.


Of course it doesn’t beat the bread but it comes pretty darn close.

Love it, love it, love it!! But sadly, I never found a shop one as good as the home made one!!

And when I make it, I eat it All!! So it is very dangerous.

You have been warned.

Another bonus is that it is so easy to make………I can whip some up while making dinner.

So it is a mid-week lunchbox lifesaver:)

So let’s get Crunchy!! Or should that be gingery….

God, where do I come up with these hideous sayings???

Slice it up!!

What will you need???

No helpers as they will eat the mix and then lick the icing bowl, leaving none for greedygirls!!

2 cups of plain flour

1 tsp baking powder

150g softened butter

2/3’s a cup of sugar

2 tsp ginger

Ginger crunch!!


60G butter

2 tbsp golden syrup

2/3’s a cup of icing sugar

1 tbsp of ginger

Mmmm, tasty…

Place sugar and butter in a bowl and mix until creamy and pale.

Add in ginger, flour and baking powder and mix well.

Grease a baking pan , usually 30 cms x 20 cms.

Place mix into the baking pan and spread out over the pan.

I like to lightly press this out using my hands as it’s quite sticky to do with a spatula.

Slightly damp hands helps too but not too wet!! 🙂

Bake in oven at 190 celsius for 25-35 minutes until slightly coloured.

Eat it!@!!!

I do sometimes bake it a bit more until goldy as I like a crispy shortcake but if you don’t then until pale coloured will suit you.

About 10 minutes before this is baked, put all icing ingredients in a pan and combine, stirring until ready, then put on very low heat.

Remove shortcake  from oven and allow to cool slightly.

Pour icing on and spread well.

Allow to cool and then slice when this is set.

Cut a HUGE piece and ENJOY, ENJOY, ENJOY.

I have seen versions with pieces of crystallised ginger in it.

Personally I think yuck, too much ginger, but if you are mad for ginger give it a try.

You can put it in the base or thin slices or grated in the icing.

You can also do healthy versions or add oats to the base shortbread.

Oats in the base are nice but somethings , i reckon are best, simple as:)
