I have a glut of banana’s as for some reason the greedyboys aren’t scoffing them like they used to 😦
So what is a girl to do?
Well I froze some, I used some, I let some get browner and still I had bananas….Now I like bananas but there is a limit to what can do with them…
I decided to make some Banana muffins, as the greedyboys like them and that will use them nicely….
Nice and easy to make as well.
Moist and tasty but not stodgy at all:)
So what will you need ?
2 large spotted bananas, the blacker the better 🙂
60g of honey
1 & 1/2 cups of flour
1 tsp vanilla essence
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
Pinch of salt.
Preheat the oven to 190 celsius.
Put honey, butter and vanilla into a saucepan and melt on a low heat.
Mash the banana while the butter etc is warming.
Place all dry ingredients into a bowl and combine together.
Pour the banana’s into the butter honey mix and then pour into the dry ingredients.
Don’t over mix else it will be stodgy.
A few good stirs will be fine:)
It looks really ugly but, it tastes great!! I promise!
You can make 24 small muffins or 12 larger muffins.
Put the muffin cases into a muffin tray and fill muffins until 3/4’s.
Place in oven and bake for 25 minutes or until golden brown and bounce back at touch.
Allow to cool in the muffin pan for 5 minutes, then remove gently and cool on racks:)
Tasty while warm but equally nice cold.
