A Greedyboy Favourite….Pikelets..

In the same vein as Greedyboy hotcakes…

A firm favourite and good tummy filler for greedyboys.

Stack em high!!

These babies can be sweet or savoury…

Specially nice spread with butter, jam and cream or even a lick of vegemite ):

Dripping with passionfruit or nutella.

Maple syrup, golden syrup, lemon curd, lemon spread and ricotta….All delicious toppings.

Argh, now I am starving and dinner is at least 30 minutes away

The beauty of these is that greedyboys can make these themselves.

Granted , they tend not to ….being of the lazy persuasion….

However, it is quick and simple for me to make them for them>

Mix it up! or should that be whisk it up:)

So you will need…..

this will make about 30 odd pikelets, so half, double, triple the recipe at your leisure.

2 eggs

3/4 cup of castor sugar

Pinch of Salt

1 and 1/2 cups of milk

2- to 2 & 1/2 cups of flour

3 tsp of baking powder

50g butter.

Cooking nicely…

Whisk eggs and sugar until pale and fluffy.

Add in salt and milk.

Combine baking powder and flour in a bowl and add in 2-3 goes to the milky egg mix.

Combine well and whisk until smooth before adding the next amount of flour.

You may like to add a little more flour or milk if the texture is too thick or runny.

Pre heat fry pan to a medium heat and add 10 g of butter.

I usually use a ladle and get 2-3 pikelets per ladle .

Ladle as above .

When the mix has bubbles appear and the bubble burst, flip it over.

The pikelet should be brown and spotty:)

Almost ready…

Wait about 2-3 minutes when you have flipped the pikelet and it will be ready to remove.

Put it on a plate in the oven or just a plate to cool…

Continue on until the mix is finished.

When finished, ENJOY, ENJOY ENJOY!!

Ready for Greedyboys to eat…
