This cake is my ABSOLUTE favorite!!
It doesn’t beat the bread BUT it comes VERY, VERY, VERY close.
I love fruity things as you know but I don’t like heavy fruit cake but this cake hits the spot.
Glace cherries, mmmm and a combination of light airy moist cake and marzipan.
I don’t make it often as I can eat the whole thing, nibbling away over a day or so.
NOT GOOD!! But oh so delicious.
So let’s do it and get very cakey today!!
What will you need?
2 cups of mixed fruit
1/2 cup of chopped up Glace cherries
1/2 cup of almond meal
200g of softened butter
200g of castor sugar
Zest of 1 lemon
2 cups of pure flour
1 &1/2 tsp baking powder
1 tsp cinnamon
1 tsp ginger ground
3 tbsp milk
400g of marzipan or 1kg for full monty decoration.
Cream the butter and sugar until light and fluffy.
Add in the eggs, one at a time and beating well after each addition.
Add lemon zest and almond meal, combine well.
Combine all dry ingredients in a separate bowl and mix well.
Add one cup at a time of the dry ingredients, stirring well after each addition.
Finally fold in the fruit and cherries.
Grease a 20-25cm round tin but square is good too.
Preheat oven to 180 Celsius.
You may like to line the tin with paper as well, I do the bottom but you can do the sides if your oven is quite hot.
Place one half of the mix in the tin and spread out.
Roll out the marzipan and cut to shape the cake tin and lay on top of the cake mix.
Put the final half of the cake mix over the marzipan and spread out.
Place in the oven and bake for 30 minutes and then turn temperature down to 160 celsius and cook for a further 60-90 minutes.
You want the cake to be goldy brown but the tester to be cake free!!
When ready, remove from oven and allow to cool completely before removing from the tin.
This is where I stop as I find a marzipan icing on top too sweet for me.
Now if you doing the full monty icing, once again roll out the marzipan and cut out a circle to place on the top of the cake.
Lightly brush top of cake with warmed jam, preferably apricot, and then place marzipan layer on top.
You can also make 11 balls, that represent the apostles and place around the cake.
You can then slightly blow torch the marzipan and give it a burny , crunchy look.
When you are ready, cut a slice and ENJOY, ENJOY, ENJOY!!
