You can’t catch me, I’m the gingerbread man!!

Remember this? and who could forget gingerbread men?

Gingerbread boy…

I love Gingerbread boys (prefer to call them that) and gingerbread babies….

There are a few recipes and this one I like as it’s a spicy one and it reminds me of the rich gingerbread cakes/loaves, Full of spices and molasses.

It has a wee bit of fire to it having ginger in it..

Do the greedyboys like gingerboys? Why indeed they do!!

They used to love making them with me….

But now they say…THEY ARE GINGERBREAD MEN, MUM!! ….With a big sigh, that says “silly woman”.

Run, Run, before you get eaten!!

So what do you need?

Some imagination as I want you to get your cake on today and ice these beauties with more flair than my traditional lads above:)

So without further blathering…..

150g of softened butter

1 cup of dark muscovado sugar

1 egg

120mls of Molasses, the black strap STRONG kind!!

3 tsp ginger

1 tsp cloves

1 tsp cinnamon

1 tsp nutmeg

3 and 1/2 cups of pure flour

1 tsp baking soda

Pinch of Salt.

Cream the butter and sugar.

Add the molasses and the egg and mix well.

Sift in 1 cup of the combined dry ingredients(flour, spices, salt and soda) at a time until all incorporated.

Make sure the dough is well combined.

Cover with plastic and leave in fridge for 2 hours.

All shapes

Remove from the fridge and gently roll out the dough on a very lightly floured board/ area.

Preheat oven to 180 celsius.

When dough is rolled out then place cutter son the gingerbread dough and cut out the shapes.

Gently place the gingerboys on a baking tray with baking paper.

Carry on cutting until a tray is ready to go into the oven.

Pop them in the oven…sob!!

I place the remaining dough back in the fridge if not all rolled out until the tray in the oven is done.

But it’s no biggie not too.

You may like to cut all the dough(if you have 2-3 trays) and then put the trays in the fridge , or bake all at once.

Bake until a likely colour appears, usually about 10-12 minutes.

Remove from oven and cool on trays for 5 minutes,then transfer to racks.

cooling….

When cool, mix together 1 cup of icing sugar and juice from 1 lemon to make a lemony icing.

Mix well and make a small icing tube or place in an icing bag and pipe faces etc on to the boys:)

Leave to set and then when set, ENJOY, ENJOY, ENJOY!!

Argh…..Eat a arm or a leg…..
