Another NZ old favourite and one dear to the Greedyboy heart:)
I ate this as a child, my boys do and hopefully their boys will too.
Very, very sweet so not a every day thing but with condensed milk in it, who is surprised?
So we definitely need to get GREEDY today…
This slice is ideal for TGIF type thing or a mid-week bastard week happening pick me up:)
I almost had heart failure as I brought by accident the ‘lite’ condensed milk….
This still turned out wonderfully but I would still use the full version:)
What will you need?
1 cup of pure flour
2/3rd’s a cup of coconut
1 tsp baking powder
Pinch of Salt
1/2 cup of brown sugar
100g butter melted
FOR THE CARAMEL:
1 can of sweetened condensed milk.
40g of golden syrup
40 g butter
FOR THE DOUBLE CARAMEL:
1 bag of Nestle caramel chips.
What do I do?
Preheat the oven to 180 celsius.
Combine all the dry ingredients and mix in the butter.
Mix well and press down into a square pan or rectangle BUT IT HAS TO BE FULLY LINED.
Paper needs to come up to the top of the pan, not just the bottom.
Err, well at least mid way like mine:)
Bake in oven for 10 minutes.
Remove base from oven and allow to cool.
For the next ten minutes, stir the caramel mix until it starts to thicken.
Pour on top of the base and return to the oven for another 10 minutes.
Remove from oven and allow to cool in the pan.
While slice is cooling, place caramel chips in a double boiler and melt over boiling water.
Don’t let the steam or water mix with the caramel chips.
When melted, spread over the top of the slice.
Allow to cool for 15 minutes and slice before caramel sets.
Place in fridge until totally cool.
When ready, slice a piece, pour a cuppa and ENJOY, ENJOY AND ENJOY!!
