I must confess that I like to eat shortbread dough.
I am not usually partial to cookie dough but for some reason, I do like shortbread dough.
It is a bit of a worry, it could become addictive.
Shortbread recipes are pretty much the same with the odd variation.
It is that sort of recipe that is best left untweaked..
You can’t improve a classic!!
This one is one I have used for years and years and I THINK, I got it from Jo Seagar.
She is the Doyenne of NZ cooking.
She used to lick her fingers and get stuck in, everyone loves Jo… Fabulous cook/chef as well.
Sort like a NZ Julia Childs…Big boned charismatic woman, that people love.
Plus you know she eats her food and it is food that any one of us could do.
Shortbread is great as it is easy peasy(as Jo says) and quick… And you can do so many variations on it.
The greedyboys love it, especially when i sprinkle one lot with sugar!!
Very naughty but they LOVE it.
So without further ado…..
250g butter – NO SUBSTITUTES!!! NO, NO, NO….
1 cup of icing sugar
1 cup cornflour
1 and half cups of plain flour.
WHAT DO YOU DO?????
Preheat oven to 150 celsius or 130 fan bake.
Cream butter and sugar until light and fluffy.
Add in cornflour and flour and combine well.
Lightly dust bench with flour and roll out VERY GENTLY.
Cut into traditional tablet form or use cookie cutters.
Place on tray with baking paper.
You can prick them with a fork and sprinkle with a touch of sugar if you like.-
Bake for 25-30 mins until slightly golden.
We don’t want much color here.
Allow to cool on tray for 5 minutes and then transfer to racks.
When cool, ENJOY, ENJOY, ENJOY!!! Talk about melt in the mouth…..Heavenly…
Now back to the Shortening bread…. its sort of fry bread I think….
