Yummy in my Tummy Passionfruit & Lemon Muffins..

Just perfect for morning tea, in fact the greedyboys tell me they are good for anytime.

Hmm, not sure that is a compliment, as they say that about 2 minute noodles !!

just luscious and moist…

Not really a muffin maker really but I like the odd cakey thing..

But l would then like to eat ALL the cakey thing regardless of it being a 24 inch cake , so I decided muffins were probably a good choice…

This recipe too, is nice and easy, quick and no fuss.

Just what all greedygirls like:)

So what do you need?

A big spoon to lick the batter:)

2 cups of pure flour

4 tsp baking powder

Pinch of salt

3/4 cup of sugar

100g melted butter

1 egg

1/2 cup of milk

2/3rds cup of passionfruit pulp or you can be cheating and use the sweetened passionfruit you get at the supermarket.

Zest of 1 lemon and juice of lemon.

2 cups of icing sugar for icing

30 g butter for icing

A little milk if needed for the icing.

Pre heat the oven to 190 celsius.

Place 12 mid-sized muffin cups in a muffin tray.

Place all dry ingredients in a bowl and combine together.

Melt the butter, allow to cool a little and add in the egg and milk.

Mix together, not over doing it, then add in the passionfruit and lemon zest.

Combine and then spoon into the muffin cups.

I like to fill it to about 3/4 but up to you…

This does 12 mid-sized muffins nicely or 6 texas sized ones:)

Place in the oven for 12-15 minutes or until slightly golden and springs back on touch.

Whilst it is cooking, make your icing.

Place sifted icing sugar into a bowl, add in softened butter and lemon juice, mix well until creamy and lump free.

If it is a little dry, then add a little mix.

You want quite a stiff icing if possible but it’s no biggie, if you add a little bit much milk.

Cover icing with gladwrap and I put it in the fridge.

Remove muffins from the oven and allow to cool for 5 minutes and then gently place on rack until cold.

Give the icing a wee stir and then its ready to rumble!!!

When cold, place icing on the muffin…

Allow 30-60 minutes minimum for icing to set and then you can eat one….

Nah, you can eat one when ever you like, 5 minutes after iced is best:) with lovely hot black STRONG coffee.

    • Hi there. No, Pure flour is that, just flour but it’s generally referred to as a lower protein level flour.
      Sometimes it can be called cake flour.

      Hope this helps.
