Love jammy dodgers too…
Ooooh, often wonder what they would be like with passionfruit jam, so I must REMEMBER that before i add the jam!!
They are scrummy little morsels and so nice for afternoon tea.
They do remind me of Italian biscuits, which are often light, dainty and sinfully delicious.
Only problem is you need at least 5-6 to feel you have sampled them properly.
You know, taken a fair representative sample of whats on offer!!
Nice and easy recipe too, quick and ready in a snap!!
Great if people are coming round soon and you have nothing to offer…
So what will you need?
200 g butter softened
1 cup of castor sugar
2 & 1/2 cups of self-raising flour
Raspberry jam (but plum is just as nice)
Cream butter and sugar until light and fluffy.
Add in eggs, one at a time and mix well.
Add in sifted flour, 1 cup at a time.
Mix until well combined.
Preheat oven to 180 celsius.
Roll into balls, about 1.5 tsp of dough per cookie and place balls on your baking tray with paper.
You can make big ones if you want and use 4tsp of cookie dough.
Maybe try half and half?
Lightly dust thumb with flour and poke the ball in the middle creating a void for the jam.
Place jam into the hole , usually about 1/4 of a teaspoon, if that.
Place in the oven and bake for 10-12 minutes until lightly browned.
Personally i like them with a bit of color but some people don’t , so up to you.
I am not found of the soft dough cookies, so that’s why I like a well cooked cookie, i suppose.
Remove from oven and leave on tray for a few minutes, then transfer to baking racks.
This makes about 45 jam drops, so plenty to go round:)
They are very tasty warm BUT be warned, the jam will be hot!!
Lovely with a small black coffee in the afternoon sitting on the back balcony…
As I said, i want to try them with passionfruit jam and I have a few other ideas up my sleeve for this, its a nice base recipe.
I just won’t tell nanny!!
Those naughty greedyboys eat them with ice cream as well, like an ice cream layer sundae type thing!!
