Well that is it!! Sprinkles were definitely needed.
In fact, I think whisky was needed in all honesty:)
My baby has graduated from primary school and will be going to high school next year.
Next thing we know, he will be getting married!!!
Lets leave that for another day.
I have enough trouble thinking about the girlfriends of the older two!!
For some reason, when I think of sprinkles, I think of my happy socks….
maybe the same bright colors?
Sprinkles always make me happy, I do think it is color related, to happiness that is.
Hideous taste but lovely and happy….
Anyhow I made my baby greedyboy some cupcakes (Only a few he told me!!) and I go to pick him up and he has put them on the table and not opened the lid!!
Hence , no one ate them, so home they came for the troop of greedyboys and friends to eat….
Hmmm, I did wonder if it was intentional as the cupcakes lasted 1 hour here maybe!!
This is a nice recipe, its simple yet light and tasty.
Not stodgy like some cupcake recipes can be.
What will you need?
This will make 25-30 small cupcakes as above or 15-18 large ones (as below)
(you can half it , i won’t mind )
250 g butter
1 cup of castor sugar
2 Tbsp of Vanilla Essence or the seeds of 1 vanilla bean
2 and 1/2 cups of flour
3 tsp baking powder
60mls of milk.
For the Icing:
2 cups of icing sugar
50g softened butter
1 tsp vanilla essence
Enough milk to create smooth paste, usually 2-3 tsps
Food coloring if you wish.
Sprinkles, stars, glitter, hail…..
Line muffin tray with cupcake papers.
Preheat oven to 180 celsius.
Cream butter and sugar until pale and fluffy.
Add in the vanilla essence or seeds and 1 egg.
Combine well and add in the remaining eggs with a little of the flour.
Mix well and then add in the remaining flour and baking powder and the milk.
Combine till smooth.
Using a teaspoon, fill the cupcake papers until 3/4 full with mixture.
Repeat until all the mixture is used or tray is full.
Place in the oven and bake for 12-14 minutes for the smaller ones and 18-20 minutes for the larger ones.
Allow to color a little and remove from oven.
Allow to cool in the pan for a few minutes and then place on racks.
While they are cooling , make the icing.
Sift icing sugar into bowl and add in softened butter.
When smooth, add in essence (food colouring if using) and combine well.
Add in some milk if you need a looser icing.
Mix well and place in fridge until needed.
Once cool, ice them….
When icing them, I would suggest an icing bag but if you are like me and didn’t have one to hand after wrecking the old one and forgetting , your options are:
1) use a plastic bag , you will be limited in what you can do but you can do swirls….
2) make a small bag from cooking paper, forming a triangle.
3) dollop it on with a spoon or palette knife (this is what I did)
Then sprinkle away!!! or glitter or fairies…whatever you like!!
You are only limited by your imagination…
This is a nice base recipe for cupcakes too.
Perhaps a mars bar cupcake or m & m ‘s?
