A simple butter icing belies the surprise inside!!
These are top of the line in scrumminess!!
Need I say, that these disappeared within about 3 hours!!
We are talking monumental greediness and delicious there:)
I used Nestle chocolate drops today BUT Whittakers white chocolate with a tab in each is ………sooooo good too!!
FINALLY I NOW HAVE NEW ICING BAGS, SO EXPECT VISIONS OF GRANDEUR AND DELIGHT!!
Err next cupcake batch that is…..
I used my base cupcake recipe found here…but tweaked it a little…..
What will you need?
150 g butter
2/3rds a cup of muscovado sugar
1 Tbsp of Vanilla Essence or the seeds of 1 vanilla bean
1 and 1/2 cups of flour
1.5 tsp baking powder
30mls of milk.
White Chocolate pieces, buttons, chunks.
For the Icing:
2 cups of icing sugar
50g softened butter
1 tsp vanilla essence
Enough milk to create smooth paste, usually 2-3 tsps
Food coloring if you wish.
Sprinkles, stars, glitter, hail…..
Line muffin tray with cupcake papers.
Preheat oven to 180 celsius.
Cream butter and sugar until fluffy but caramelly looking:)
Add in the vanilla essence or seeds and egg.
Add in the flour and baking powder and the milk.
Combine till smooth.
Using a teaspoon, fill the cupcake papers until 1/2 full with mixture.
Pop 1-2 choc buttons or one or two (go on be a devil) Whittakers tab/tabs in the middle of the mix and then add another teaspoon on the top of the choccy.
So the cupcakes papers should be 3/4 full.
Repeat until all the mixture is used or tray is full.
Place in the oven and bake for 18-20 minutes or until it springs back on touch…
Allow to color a little and remove from oven.
Allow to cool in the pan for a few minutes and then place on racks.
While they are cooling , make the icing.
Sift icing sugar into bowl and add in softened butter.
When smooth, add in essence (food colouring if using) and combine well.
Add in some milk if you need a looser icing.
Mix well and place in fridge until needed.
Once cool, ice them….
When icing them, I would suggest an icing bag but if you are like me and didn’t have one to hand after wrecking the old one and forgetting , your options are:
1) use a plastic bag , you will be limited in what you can do but you can do swirls….
2) make a small bag from cooking paper, forming a triangle.
3) dollop it on with a spoon or palette knife (this is what I did)
Sometimes the beauty is in the ugliness…..Well you know what I mean…
Then sprinkle away!!!
