I love gingerbread, gingerbread men and ginger type things …
I find it very very hard to resist these…
So good for Xmas.
Light, not too sweet. a little crunchy, just right!!
These are a gorgeous version of the gingerbread men.
They are sort of like a thinner version of a ginger cookie.
Fragrant and spicey with molasses and spices….just gorgeous with black coffee.
Actually, I like most things with black coffee:)
These fill the kitchen with a gorgeous gingery smell.
You could, I think drizzle a very thin lemon icing over them in ribbons …
But I like them as is….Taste one first and decide….
What do you need?
3/4 cup of icing sugar
2 cups of flour
1 tsp baking powder
Pinch of Salt
2 tsp ginger
2 tsp cinnamon
2 tsp cloves
1 tsp cardamon.
Cream butter and sugar until pale and fluffy.
Add in the sifted dry ingredients and combine well.
Put dough in gladwrap and leave in fridge for 1 hour.
Lightly flour board/bench.
Pre heat oven to 180 celsius.
Gently roll out dough, you want it to be quite thin.
These are more of a crispy cookie than soft and doughy.
Place cut out cookie to baking tray.
Bake in oven for 10 minutes until goldy brown.
Remove from oven and cool on racks.
These are delicious after about 5 minutes from the oven but nice cold with hot coffee.
You could as I said ice them and you could even, make them into tree ornaments (edible ones that is)
