No matter, We all say yum…
Visions of childhood come rushing back!!
My mother used to make one but it was more custard, than pastry creme.
I do have to say that this is a true mix of custard and vanilla creme.
It is not totally pastry creme or totally custard.
It is a lovely dovely mix and super scrummy!!
So what will you need?
YOU CAN NOT EAT IT UNTIL THE NEXT DAY!!
THIS IS THE RULE!!
DO YOU PROMISE???
1 small packet of puff pastry (Yes, I have been a wee bit lazy and not made it)
2 cups of milk
1 cup of thickened cream
Good slug of Vanilla Essence or 2 Vanilla beans
1 cup of castor sugar
2 tbsp of cornflour
1/3 cup of custard powder.
70 g of butter.
Preheat the oven to 220 celsius.
Place pastry in two pieces (cut to your dish size ) on the baking tray (I had to use two tray)
Brush lightly with milk and bake for 15 minutes.
Whilst the pastry is cooking, place milk in a saucepan and warm slightly, adding in the vanilla.
Bring to slow boil and then remove from the heat.
Remove pastry from the oven and allow to cool.
Mix castor sugar and eggs in a bowl and beat until pale.
Add in custard powder and cornflour to the eggs mix, whisk well and set aside.
Add the eggs mix to the warmed milk, whisking until well combined, then stir in the thickened cream.
Leave for 15 minutes, then return to a slow heat and whisk constantly until mixture thickens, then lastly add in the butter and combine well.
Make sure custardy mix is smooth and set aside for a moment.
Cut cooked pastry to fit your dish and place one piece of pastry in the dish (see above).
Pour warmed custard onto the pastry and then place the 2nd piece on the top.
Leave to cool slightly, then place in the fridge.
When cool, make a simple white icing (or a passionfruit one if you wish).
Pour over the top of the pastry, cover with gladwrap and then leave in the fridge overnight.
DO NOT SLICE THIS UNTIL AT LEAST 12-24 HOURS HAVE PAST!!!
Don’t be smug and think it will be ok after 2-3 hours…or greedy like moi!!
Let it wait….It will be worth it.
