For a few days my youngest greedyboy has been hassling me to make Bread & butter Pud…

I have been reluctant as I remember making it before and him not eating it!!

He of course does not recall this at all…He thinks i am senile!!

So bread and butter pud it is:)

A small alteration is that I recall at times, my mother making Bread & Butter pud with Meringue on it.

Greedyboy did not want that but we put a wee bit on the end for Greedydad, who said yum!

What will you need?????

4 eggs

3 cups of milk

Good splash of Vanilla Essence

1/2 cup of castor sugar

1 cup of muscovado (or brown sugar) sugar

Butter to spread

Jam to spread

20 pieces of white bread.

Beat them baby!!

Break 2 eggs in a bowl, separate the last 2 eggs, placing the whites in a separate bowl.

If you don’t want meringue, then beat all eggs at once:)

Place castor sugar in with the eggs, a splash of vanilla and beat until pale and creamy.

Add in milk, a little at a time.

Spread bread out and butter all pieces and jam half of them.

Pre heat oven to 180 Celsius.

Place the bread on top of each other like a sandwich.

Cut into squares, triangles…whatever takes your fancy….

Lay into a well-greased baking dish.

Do one layer and then pour one-third of the eggy mix over the bread and repeat until you have 3-4 layers of bread.

I then sprinkle the muscovado sugar to form like a crust on the top.

Place in the oven and bake for 45 minutes or until puffy and golden and a skewer comes out clean:)

If you are doing the meringue bit, then beat your egg white, add in a little castor sugar and then place on top of the pudding ABOUT TEN MINUTES BEFORE THE END of cooking!!

Not before please, it will be too browned.

Remove from oven and eat straight away whilst hot.

With Ice cream, clotted cream, milk or just alone is yum, yum, yum!!!!

Now the wonderful thing about this is you can add so many things to it.

Make it with so many types of bread.

Imagine what it is like with brioche or Pain au Chocolat???

It is divine but its hard to keep that bread until stale!!

Fruit breads, add in banana’s choc chips, raisins, liquor…

The list is endless and only limited by you:)
