Fabulous moist cake !!
lovely lemon lime icing…
Heavenly and very very tasty indeed.
Ideal for high tea, afternoon tea, nibbles, in fact all the time!
I love coconut with a passion, almost as much as bread….
Hmmm need to make coconut bread & buns:)

Fabulous Feijoa cake needs our ATTENTION !!
So what will you need?
200 g butter
1 cup castor sugar
1 & 1/2 cups plain flour
2 tsp baking powder
2 tsps ground ginger
2 tsp mixed spice
1 cup desiccated coconut
1 cup milk
zest of 1 lemon
1 cups peeled and diced feijoas
Pinch of salt.
Preheat the oven to 160 celsius.
Grease and line your baking tin.
Pour milk into a wee bowl and add in enough juice(1-2 good squeezes) to curdle the milk-TA DA Buttermilk!!
Cream butter and sugar until pale and fluffy.
Add in the eggs .
Mix the dry ingredients together and add in with the milk, a little of each at a time.
Combine well and then add in feijoas and coconut.
Mix well and pour into baking tin.
Pop in the oven for 40 -50 minutes or until baked.
Remove from oven and cool in the tin for 30 minutes.
REmove from tin after 30 minutes on to a wire rack to cool fully.
When cool, icing with a simple lime/lemon icing.
Make up mixing 2 cups of icing sugar with 1 tbsp milk and lemon/lime juice until it resembles a smooth paste.
Mix until smooth and pour on cake:)
You can add in toasted coconut on the top of the icing but with my greedyboys, no-show!!
THEY HATE COCONUT….
Well, they like it fresh and in baking but not on top of things or where they can see it…go figure!!
